Carrot Cake

Ingredients

Wooden Spoon Cake Flour

2 cups

Baking Soda

2 tsp

Salt

1/2 tsp

Cinnamon

2 tsp
Eggs;beaten
3 pcs.medium
Vegetable Oil
3/4 cup
Buttermilk
3/4 cup
Sugar
2 cups
Vanilla
2 tsp
Grated Carrots
2 cups
Chopped Nuts(optional)
1 cup
Raisins (optional)
1 cup
Crushed pineapple
18-oz can,drained

Procedure
  1. Pre-heat oven to 350 deg.f
  2. Combine cake flour,baking soda,salt and cinnamon, set aside.
  3. Combine beaten eggs, vegetable oil, buttermilk,sugar and vanilla. Beat until smooth..
  4. Stir in all combined ingredients
  5. Pour into 2 greased and floured 9-inch cake pans..
  6. Bake for 35 to 40 minutes.
  7. Immediately spread with buttermilk glaze. Cool in pans for 15 minutes.
  8. Remove from pan and cool completely.

Optional

Buttermilk Glaze

Ingredients
Sugar
1 cup

Baking Soda

1/2 tsp
Buttermilk
1/2 cup
Butter
1/2 cup
Light syrup
1 tbsp
Vanilla
1 tsp

Mix everything except the vanilla, bring to boil in a heavy pan, boil for about 4 mixtures. Remove form heat, add vanilla and stir. pour while still hot over the cake
