Cinnamon Roll

Ingredients

Baker's % Wt (g) Volume
 Wooden Spoon All- Purpose Flour 100% 500 gms. 4 cups
  Instant Dry Yeast 2% 10 gms. 1 tbsp.
 Refined Sugar 20% 100 gms. ½ cup
 Shortening 10% 50 gms. ¼ cup
 Salt 0.5% 2.5 gms. ½ tsp
  Bread Improver 0.4% 2 gms. ½ tsp
 Whole Egg - 1 pc 1 pc
 Butter 11.25% 56.25 gms. ¼ cup
 Water 48% 240 gms. 1 cup
       


 


Procedure:
 

  1. Mix all the ingredients.
  2. Knead the dough until smooth and elastic.
  3. Transfer to a greased bowl. Cover and allow rising in a warm place until double about 45 mins. to 1 hour.
  4. Punch down dough. Divide into 18 portions. Roll out each dough into a flat sheet.
  5. Brush with butter or margarine (about 2-tsp.). Sprinkle with sugar mixture (1/3 cup brown sugar and 1 ½ tsp. cinnamon powder).
  6. Sprinkle with raisins, nuts and chocolate chips. Roll like jellyroll starting on the narrow end.
  7. Cut into 3 portions crosswise. Put into greased muffin pans (greased with margarine or butter and brown sugar). Brush top with egg or milk wash.
  8. Allow rising until double in bulk.
  9. Baked at 375 oF for 15 mins. or until done.
