| III.
- Place all
ingredients from I in mixing bowl and mix until
developed.
- Divide the
dough into 2 or 3 portions depending on the total dough
size.
- Form the
dough into blocks about 3 to 4 inches thick and wrap in
plastic.
- Retard the
blocked doughs overnight.
- Remove the
blocked doughs from the retarder and place side by side on a
clean, even surface dusted with flour.
- Pour the
melted butter over the dough surface.
- Sprinkle a
generous amount of Mixture II (sugar-cinnamon-nuts-raisin
mixture) over the melted butter and allow the mixture to be wetted
by the melted butter.
- Using a pizza
cutter, cut the dough into 2 x 2 inch squares.
- By hand blend
slowly the cut pieces so that each piece is coated with the
butter-sugar topping.
- Scale about
500 grams into close-top pans (4" x 4" x 10") and proof until
dough reaches desired height.
- Bake at 350°
F for 28 to 30 minutes.
- Carefully
remove from pans while still hot into wax paper liners.
