Procedure
  1. Use Diamond Active Dry Yeast for the yeast requirement.
  2. Soak yeast in 200 ml water for 15 minutes.
  3. Add the dry ingredients, after a short mix add the shortening.
  4. Mix at low speed untilsmooth.
  5. Divide the dough into 2 equal parts.
  6. Sheet each portion into a floured sheet pan and block into a rectangular shape 1 inch thick.
  7. Apply the roll-in fat using the English method (3 fold).
  8. Apply another (3 fold).
  9. Retard for 30 minutes then apply another 3-fold.
  10. Do make up.
  11. Alow to proof (about 3/4 more of initial size).
  12. Bake at 375 degF. Judge propoer bake by color.
