- Use Diamond
Active Dry Yeast for the yeast requirement.
- Soak yeast in
200 ml water for 15 minutes.
- Add the dry
ingredients, after a short mix add the shortening.
- Mix at low
speed untilsmooth.
- Divide the
dough into 2 equal parts.
- Sheet each
portion into a floured sheet pan and block into a rectangular
shape 1 inch thick.
- Apply the
roll-in fat using the English method (3 fold).
- Apply another
(3 fold).
- Retard for 30
minutes then apply another 3-fold.
- Do make
up.
- Alow to proof
(about 3/4 more of initial size).
- Bake at 375
degF. Judge propoer bake by color.
