Marble Bread with Streusel Topping

Ingredients

Baker's % Wt (g) Volume
 Wooden Spoon All- Purpose Flour 100% 500 gms. 4 cups
  Instant Dry Yeast 2% 10 gms. 1 tbsp.
 Refined Sugar 20% 100 gms. ½ cup
 Shortening 10% 50 gms. ¼ cup
 Salt 0.5% 2.5 gms. ½ tsp
  Bread Improver 0.4% 2 gms. ½ tsp
 Whole Egg - 1 pc 1 pc
 Butter 11.25% 56.25 gms. ¼ cup
 Water 48% 240 gms. 1 cup
       


 


Procedure:
 

  1. Mix all the ingredients.
  2. Knead the dough until smooth and elastic.
  3. Divide dough into 2 portions. Add the following to one portion:
    • ¼ cup cocoa
    • 1 tsp. chocolate brown food color.
  4. Knead until smooth. Allow rising until double in bulk- about 45 mins. to 1 hour.
  5. Punch down dough. Divide into 2 portions. Roll out the chocolate and the plain dough.
  6. Put the chocolate dough over the plain dough. Roll and form into loaf. Brush top with egg or milk wash.
  7. Make slits or cuts on top of dough.
  8. Sprinkle streusel topping. Allow rising for another 45 mins. until double in bulk.
  9. Bake at 375 oF for 20 mins. or until done.

Streusel Topping:
Mix together:

  1. 1/3 cup margarine
  2. 1 cup flour
  3. 2 tbsp. BOS or butter or margarine
  4. 2/3 cup sugar
